Gift cards are refundable as gift cards, not as cash. The work around is to use the funds at the casino and cash out your winnings (which is whatever is left after pulling the slots a few times). Otherwise you should receive the balance (if over $10) back as a gift card within 2 weeks - generally quicker - of your cruise.
If you use gift cards, technically, they are supposed to mail your refunded amount to you on a new gift card. They don't expire, feel free to use the amounts on another cruise. OR, do what I did and use the "casino trick" to obtain your balance in cash on the last night.

Here you can redeem the points you earn as a Verizon customer for all kinds of things. One of them is a discount on Carnival gift cards, e.g. use 1000 Verizon points and pay $90 for a $100 gift card.
