If your Waffle House's staff is new, they might just not know how to make them. They are no longer listed on the menu but can still be made (just like the steak and eggs) however omelets are probably the most difficult thing to make properly, so odds are they don't know how to make it, or can only make a complaint worthy omelet.
Waffle house does things the way they do for a reason. Simplicity is always key. Don't like it, don't eat there. They're not hurting for business. The company is debt free, has its own private jets for corporate workers, offers full benefits and has great pay.. All stock is employee owned, and growing almost %6 annually.
