Cheesy Broccoli Soup. 2 tablespoons vegan butter. ¾ cup finely chopped celery. 2½ cups plain unsweetened almond milk. 2 cups chopped broccoli florets. ½ cup cashews. 3 tablespoons nutritional yeast
Add 1 cup broth, the broccoli, cayenne and nutmeg, then season with salt and pepper. Bring to a simmer, reduce the heat to medium and cook, uncovered, until thickened, about 15-20 minutes.
